Canned soup
For dessert:

(You can even get real fancy by baking some cookies or brownies to take along with you - vegan desserts won't spoil like typical dairy and egg desserts!)

Wow! I am not a vegetarian, but I do enjoy soy products every now and then. Your list makes me not only want to go out and buy and try some of the items you listed, but also go camping. I've never been on a camping trip, but after these next couple of weeks, I will definitely need something to relax me.
